4 pounds beef rump roast
2 onions
2 cloves garlic
1 large stal celery
2 ounces salt pork or bacon

1. Trim all excess fat from roast. Mince 1 onion, the garlic, celery and salt pork.
2. Lightly flour roast; rub with minced mixture.
3. Slice remaining onion place in Crock Pot. Place roast on onion.
4. Cover and cook on low setting for 10 to 12 hours
